How to make Khoresht-e Ghormeh Sabzi with a slow cooker

Khoresht-e Ghormeh Sabzi

Iranian food is very tasty but also it is time-consuming. Iranian women disappear in the kitchen in the early morning, but by lunch time there is a pleasant smell coming from the kitchen followed by a delicious meal appearing on the table.  Ghormeh Sabzi is one of those delicious Iranian meals. It is true that Ghormeh Sabzi is a time-consuming dish to prepare, but it is very tasty and worth the effort. But, who has that kind of time anymore? I have been trying many methods to be able to prepare the Ghormeh Sabzi in less time and finally came up with this method that I will explain to you. With this recipe, you can leave the house in the morning and enjoy a delicious Persian meal once you’re back home from work at the end of the day.

Of course, the slow cooker plays an important role using this method. Certainly, like all other Persian foods, a series of prep work must be performed before adding ingredients into the slow cooker. And, my experience has shown that when it’s necessary to use meat, a quick sauté has a great effect on the taste and texture prior to adding it to the pot.

To be able to enjoy eating delicious slow cooker Ghormeh Sabzi, you can get everything ready the night before and then just quickly add in all ingredients in the morning before going to work. Or, another way is to sauté all ingredients in the morning, which I don’t think takes more than 35 minutes, and then turn on slow cooker and leave for the day. A good way to save time is to always have the herbs cleaned and ready to be used the night before.

Well, let’s start with the recipe. The first time I made this food, it tasted good but it had a lot of salt. After trying different methods several times, I finally succeeded.

Ingredients:

1 onion

4 cloves garlic

1 tsp turmeric

1lb stewing meat

4 dried Persian limes

1/3 cup kidney beans, dried- soaked over night

2 cups leeks, chopped

5 cups parsley, packed

3 cups fresh cilantro, packed

1 cup fresh fenugreek

1 cups fresh chives

Salt and pepper

Oil

First, sauté mince garlic and dice onion until their color start to change to yellow. Add turmeric and stir.

Cut meat and add to onion. At this time, you can season with salt and pepper and wait to brown on all sides.

Now put meat in the slow cooker and add soaked beans. At this time, you should add dried limes. But, before adding them, make two or three holes in the dried limes with a fork.

In another pot, add some oil and sauté leeks for a couple of minutes. I highly suggest not skipping this step.

Chop all the herbs and add to the leeks. Use salt and pepper for seasoning. Add them to the slow cooker.

In the last step, add water to the slow cooker. Cover and cook on high for 8 hours.

You can turn on the slow cooker in the morning before you leave the house. When you return home after a long day, healthy delicious food awaits you. Who would have guessed that slow cooker Ghormeh Sabzi could be so tasty and satisfying!
